Local Cuisine

Local specialties have adapted to soil characteristics, namely the lack of water and livestock and the local cultivations. The most famous:
Tomato balls. Instead of meat, we use Santorini cherry tomatoes, spices and flour.
Fava. Boiled, hot or cold, with spices or just oil, fava has been a popular dish for years.
White eggplant. Either baked with tomato and feta cheese or fried, the local eggplant is one of the favorite local dishes.
