Caper, an essential component of Greek salad and certain dishes, is one of the traditional flavors of the island. 
In late May and early June the locals start picking capers and their leaves in remote, rocky places. The search focuses on stone walls, steep coastal cliffs, and even on rocky paths or next to the road! One cannot easily cultivate it as it is native in the Mediterranean countries.
 After their collection, the capers and their leaves are placed in brine or boiled, drizzled with vinegar and oil and… ready to be served!
